Meat DefendR

Meat DefendR® is a family of liquid pH-based organic acid products that were developed to provide significant reductions in food pathogens on surface contact of human food meat proteins and in dry proteins, including gram-negative bacteria Escherichia coli (E. coli), Salmonella, Campylobacter, Shigella, and Enterobacteriaceae, and gram-positive bacteria Listeria, Bacillus, Clostridium, Streptococcus and Staphylococcus.

Meat DefendR® is currently approved for use and listed by USDA (directive 7120.1) as a clean label (label-exempt) processing aid for use in USDA processing facilities, including on whole raw poultry carcasses, poultry parts, and ground poultry; ready to eat Hot Dogs and Sausages; Raw Comminuted Beef, Raw Whole Muscle Cuts of Beef and Poultry, Cooked Poultry, ground beef and ground poultry, and as pH control agent in poultry processing water. It can be added to existing water treatment, sprayed directly on the surface of whole carcasses or further processing products. using an ionizing spray, or used in a dip process.

Meat DefendR Salmonella Reduction

Meat DefendR® is also used on dried, dehydrated protein products, to further protect from inherent food bacteria within dehydrated products.

With unique acceptance and use in human food USDA production, Meat DefendR® can also be used within these same facilities to protect product that is eventually graded for pet food treats and wet foods. It also can be applied within the pet food production process to raw whole muscle cuts intended for strips, treats, or further grinding.

Meat DefendR® is applied using an ionizing spray, or used in a dip process. The active acid base within Meat DefendR® duplicates digestive acids within the gastric system of most mammals, including humans and most companion animals, and is relatively safe to handle, thus reducing relative corrosive effects.
